Valencia
Valencia might well be the most exciting regions in New Spain, the Mediterranean Sea is a primary influence on the region. Its associated climate is conducive to ripening both grapes and oranges. It is famous for an upstart group of new, young wine makers and rejuvinated varieties such as Mando and Bobal that were nearly extinct a few years ago. Lots of high quality red and white is produced.
